Minted Potato Salad
This is a great potato salad to serve at your next picnic or outdoor barbeque. The fresh chopped mint allows the creamy dressing to leave a cool taste in your mouth.

Minted Potato Salad

Ingredients
3 lbs Potatoes
1 bunch chopped Green Onion
250 ml Plain yogurt
4 tbsp. chopped Mint
2 cloves chopped Garlic
4 tbsp. Extra virgin olive oil
1 tbsp. Paprika
Salt and pepper to taste
Directions
In large pot, boil potatoes. Drain, let cool and cube potatoes; place in large bowl with chopped green onions.
Combine remaining ingredients in a small bowl, and add dressing to potatoes. Chill for 1/2 hour or more if desired.
